Overall a 6

Workout Wednesday with Skinny Meg

I went to boot camp last night! I would say on a scale of 1-10 my overall workout was a 6. I could have pushed myself harder but I'm proud of what I did do. Plus, I ate healthy ALL day and drank a ton of water! Which is HUGE for me because I hate drinking water.

Also, I'm always delighted to see what search terms lead people to my blog. I was especially delighted yesterday when I saw that "diaper trash" was one of them. Tis no better was to feel great about oneself than to realize someone came across your blog while trying to find doo-doo. My blog is anything but diaper trash if I do say so myself:)

From Nice Gut to Nice Butt

Do you remember the reference???


I confess I didn't make it to Boot Camp last night and I know that's not good, it's just that I love naps. BUT, I did go for a 1 mile walk in a very hilly neighborhood so I'm doin alright. I also stayed on track food wise yesterday so I can stamp the day as a swell one.


Slimmer Trimmer Chicken Enchiladas

This dish was inspired by a recipe I got off Pinterest(where else?) from The Larson Lingo which is full of delicious recipes. The original recipe is for the crock pot and it is delicious! I figured it would be a great filling for some sort of Mexican casserole concoction. 

Ingredients:
3 Chicken breasts
1 package of fat free cream cheese**
1 can black beans
1 can Rotel
5 Whole Wheat Tortillas
1 packet low sodium taco seasoning mix
Fat Free shredded cheese (I used cheddar)

**if I could change anything I probably would have used Neufchâtel it has a richer taste and still pretty healthy.

Directions:
  • Dice up chicken breast however you like
  • Place chicken in a large skillet sprayed with cooking oil and cook chicken until done (I added a little chicken stock to ensure the chicken wasn't dry)
  • When the chicken is done cooking, reduce heat
  • Add the cream cheese, Rotel, and taco seasoning
  • Drain the black beans and rinse them with cold water, remove as much excess water as you can
  • Add the black beans in with other ingredients
  • Mix everything together ensuring the cream cheese gets melted
  • Cook on low for 5 minutes
  • Preheat oven to 350
  • Divide mixture evenly onto each tortilla and roll up, place folded side down into a casserole dish sprayed with cooking oil.
  • Sprinkle with shredded cheese
  • Bake for 15-20 minutes or until cheese is melted**
**Fat free cheese does not melt near as well as the not fat free kind, just ya know FYI:)

All in all I thought this tasted pretty good for being a lightened up version, I used Hot Rotel because that's what I had so it ended up being pretty dang spicy.

I'm currently not on speaking terms with a certain someone (hence the eye rolling above). I don't even know where to begin with all that. And it the words of Beyonce, "ya know I'm not gonna dis you on the internet...cuz my mama taught me betta than that". Relationships are work and when only one person works at it well then it sure don't work....I think ya catch my drift.

Other than that my weekend was glorious, spend time with my best friend and her boyfriend. We attempted to plan a trip to go to a concert but by the time we were finished we'd already changed destinations twice, no flights/hotels booked and were exhausted...there goes my dreams of being a travel agent. It made for a great Saturday though. And Sunday I observed the Sabbath and rested but I also went to church:) I need to be doing more of that!

TGIF right?! I haven't really like that saying since about the 2nd grade....it just reminds me of the restaurant TGI Fridays which in all honesty has pretty ballin food but it just screams desperation...anyways enough of that.

Lily Collins wore this outfit to Comic-Con. I'm gonna go out on a limb and say that Comic-Con is no Paris Fashion Week but I think she could have picked a two-piece that didn't look as though her va-jay-jay leaked ink.

Quit The Hatin...You cray cray too

East Tennessee gets a lot of national love. And I'm being sarcastic. First the infamous butt-chugging incident, if you don't know about that you can learn HERE. That was one ridiculous ordeal that made it all the way to The Soup with Joel McHale. I have mixed thoughts on all of that because I think how dangerous and irresponsible doing something like that is just so you can be considered cool with your frat bros.......ugh.

Well now, we are back on top. Some of you may have seen this new YouTube video that a husband filmed with his phone of his wife throwing a temper tantrum over a disagreement about going to the lake. He did this without her knowledge and apparently they are in the midst of a divorce. If you want to view the video you can just search "wife temper tantrum". I'm not going to post it here. It was on Chelsea Lately this week.

My Facebook has blown up with people's opinions on this. Mostly guys of course, with comments like "wow this is why I'm single" and other things degrading this woman. (pretty sure most people who say they "choose" to be single are just getting used to the idea that it was chosen for them) Yes she is acting ridiculous over what seems to be a silly problem. BUT haven't we all acted stupid over something at some point in our lives? I'll be the first to admit I have. And I sure as heck wouldn't want it on camera.

Don't forget he filmed this without her knowledge in their car which is a private place and a private fight between a husband and wife. It's not like she threw this fit in the middle of Target. Also, he makes sure to not show his face. Did he forget that he chose to marry her? No one forced him.

So before you judge this woman think about how you've acted irrationally and how people would react to you if you were on camera without your knowledge.

And just so we're clear if my husband ever humiliated me like this I'd be pullin a Lorena Bobbitt...just sayin.

I gave you a run down of my weekend and it was all in all decently active so I thought let's keep this shiz goin!

Monday:
I walked about a mile and a half mostly uphill and I thought I was going to die.....sad I know.

Tuesday:
I went to Beauty Hunters Boot Camp its awesome! I felt like for my first time I pushed myself so-so but I could definitely go harder!
New motto:)


I've gotta stick with this, no excuses I started the momentum and I gotta get it going!

I didn't Fall out!

To continue with my busy weekend.......

I went golfing with my boyfriend on Saturday and it was so F-ing hot!! Patrick gets really really intense when he plays golf so he isn't really fun to play with. I hit the ball a few times and I'm actually pretty decent which I kinda knew I was because I've got that golfer's build goin on....


Verdict: I would like to play more often BUT I would really prefer the weather to cool off a bit. Calling this shiz-nat a Summer sport is asking for heat strokes. Its something to do with it having to be played on grass...whatevs.



**On a funny somewhat related side note, People have found my blog while searching for Adam Scott the golfer...hmm???

And Sunday we went white water rafting!

It was SO much fun!! We did the middle Ocoee which is pretty standard but it does contain some pretty intense spots. 



This is just a video I found on Youtube, but this is exactly what we did. I'm aware there is much crazier out there but I was pretty proud of myself because I didn't fall out of the raft. Also, the guides are all pretty hot:) We have plans to do the upper Ocoee which was the site of the 1996 Olympics and it apparently gets crazier...bring it on!! Wow don't I sound like the adrenaline junkie?!

Weekend Recap

This weekend was GREAT!

I gave ya'll a preview on Friday ya know pole dancing, whitewater rafting, golfing...

First off Pole Fitness:
I highly recommend this as a form of exercise. I went with my friend Cookie (who has a great cooking blog). We got lost on the way there and she ended up picking me up on the street corner but that's irrelevant.

We get there and we are in class with about a total of 10 people. A mixture of college students, military gals, chicks with amazing bodies, chicks with tattoos, moms, etc. It was laid-back and not intimidating.

We did a series of moves which I suck at but it was great exercise and I am really considering going back because it's fun and I want to get better at it ya know personal goal to be a champion pole dancer. If you are in the Knoxville area and you are interested look up Sheer Pole Fitness and the owner is really great about updating the Facebook page.

Friday night I went out to a Scottish pub that I have never been too and it was awesome! I've been to Scotland and this place was as close to the real deal as I've ever seen. Boyd's Jig and Reel. The live music was outstanding. Angela Perley and the Howlin Moons

Pole Dancing, Deliverance, and Full House



Today I am doing a link-up that I have seen all over the place but actually have never done! And I think that with the upcoming weekend I got, it's a perfect link-up.


  • I'm going pole-dancing after work. Second income you say? No no actually just found a deal on Groupon and I really want fun ways to exercise because I hate it so much.
I'll be sure to let you know if this happens.
  • I told my significant other that I would "play" golf with him Saturday. This actually frightens me more than pole dancing believe it or not. I made him promise there would be beer and that we would go late afternoon so that I don't have a heat stroke.
Got my outfit ready!

  • Then in case I'm not getting enough adventure, we're going whitewater rafting on Sunday. I got a really good deal and I'm going to go ahead and assume that you get what you pay for when it comes to rafting the rapids in East TN...Deliverance anyone?
  • And This happened Wednesday night.......
Uncle Jesse and Aunt Becky.....too bad she's married to some Italian guy

  • Adam Levine got engaged. I know this is very sad for a lot of you, trust me I know. But, you are going to just have to deal with it like I did when Matthew McConaughey married Camila and they keep poppin out babies. Just chalk it up to bad timing.

    If I had one extra hour in the day...
    • I would use it in the mornings so that I would look more presentable for work.

    • Was shorter. Eight letters were a biotch to learn in cursive. When I was in 5th grade I wanted my name to be Blakely Cameron, I thought that name was so hip, no clue why....

    • Great! I'm loving the chevron trend although I mostly just admire it in the home decor and phone accessory department because I have to be careful how I wear it, horizontal patterns have the tendency to make my ass look like a billboard.
    My last nightmare...
    • Was actually really scary, I can't remember what happened but I know I woke up worried....not cool
    Sometimes...
    • I clean and go to church.
    My last meal on earth would be...
    • A buffet. There's not a chance in Hades I could pick just one meal I mean c'mon
    I would much rather be Cold than Hot.
    • This southern heat ain't no good for these thighs.
    Mayonnaise...
    • Grosses me out when I even think about it but, I like chicken salad so I just don't think about it.
    10 years ago, I didn't think...
    • That Britney Spears would have become such a train wreck, she's come back around but I mean let's be real it was pretty touch and go there for awhile.
    Selfishly...
    • I nap. If someone sent me a text saying they were on fire I would probably wait to reply.
    My favorite show on TV right now...
    • I was into Bates Motel and I will be again when it comes back. I like Girl Code too!

    No offense, but this will offend you

    Please stop F-ing using "no offense" as a disclaimer for your filterless mouth!

    I'm on a rant today. It drives me insane when I hear or in the blogging world see someone say, "no offense...but". Okay awesome since you said "no offense" that rude comment didn't hurt my feelings.

    Everyone is entitled to their opinion. DUH! But if you're going to share your opinion don't try and sugarcoat it man the F up and own that shiz-nat!


    Whatever happened to "constructive criticism" or honestly just saying things nicely. For example, when I was 17 I got this wild urge to die my natural blonde hair basically black. People shared their opinions right and left and I remember a friend of mine who was older and wiser than me saying, "I understand you wanting to try going darker but you did have very pretty blonde hair". Notice she didn't say, "no offense, but I hate your hair like that, makes you look like a skank".

    This is an epidemic in the blogging world, people think they're all bad and ballsy because they're behind a keyboard.....



    In other news, we just got a Cheesecake Factory in town and don't worry I've visited twice this week.....so far.
     Summer evenings are the best

    Full Tilt Tuesday

    People probably think that I am two different people, that I have an evil uglier twin. This is because when I leave the house I am either dolled up to the absolute nines or I resemble Megan from Bridesmaids.

    Back in the day ahem high school I wouldn't leave the house without freshly washed hair, a face full of make-up, Very Sexy perfume(meow) and my most stylish outfit I bought at the Body Shop

    Now, I'm impressed with myself if I've had a shower! What is the matter with me? When did I get so tired? I need to snap out of this shit!
