How Not to Eat Leftovers

I had a really long day at work yesterday so I was thrilled to be home and was not about to go back out to get dinner nor try and whip up a 4-course meal.

Luckily, I cooked a lot of baked penne pasta on Sunday. I did this on purpose because I wanted to be able to take the leftovers for lunch. Well I took some of the leftovers for lunch on Monday and I froze the rest. Since I never been no good at no fractions I put way too much pasta into one container.

I realize that it is going to take a lot to unfreeze my dinner and it would probably cause the microwave to blow up so I just defrosted it a little bit and opted to "cook" it in the oven, ya know like a DIY tv dinner. And once again my proportions were off......

It took like an hour to "cook" so I decided to refresh myself with a Bud Light, and every 10 minutes I would check on my dinner and I had to poke it with a fork, it was so stupid. I finally gave up and ate around the frozen parts...

Unsatisfactory

And you didn't think you were reading a cooking blog........

  2. bahahaha barefoot contessa! seriously, she basically says that!
I also have totally frozen everything when I should have separated. not a meal like that, but like when I've bough a big ass thing of chicken or meat and I just throw the whole thing in the freezer instead of separating dinner portions in bags or something. sucks. lol
